I dear to make these! My female parent was from Poland and she used sweetness pickle instead...both have a peachy flavour. I also similar the way yous use the whole piece of meat and gyre upward. I would cut it up into three pieces and makes smaller rollups which is so much piece of work. and I use toothpicks..my female parent also fabricated a saltine cracker stuffing (crushed crackers, chopped onions, i egg, Kellogg'south corn flake crumbs, and milk) rollup along with the pickle ones. Thank you for posting and the thought of rolling up in one slice!

Yeeeeesssssss! This is easily down my favorite recipe from Chef John. I was a little nervous nigh the pickle and then I only used one-half and could accept kicked myself for non calculation it all. The entire family unit said it was great.

Wow what a fantastic recipe! Simple and succulent! I was cooking for a small army (our six children plus a friend or ii) and then I did change the cooking method. I followed the recipe exactly correct up to the point where y'all would render the rolls to the pan with the gravy to simmer on the stove until done. Since I was cooking 8 fairly large rolls I put them in a roaster, poured the gravy over them (I fabricated enough to cover them almost completely), covered the roster with foil, and baked at 350 degrees for ninety minutes. When they were done I skimmed the grease (there was a lot), put the gravy back in the pan I browned them in, and thickened it with a little slurry of flour and beef broth. The ONLY thing I might modify adjacent time is maybe going with thinner dill spears our cutting it downward to two per roll. I volition without a doubt be making this once more!

I take been making this my whole life! I as surprised to see almost the exact re pie as I ever use. Having a very large family, six children and 14 grandchildren, I take to make a lot. Therefore I brown them and put them in the oven for an hr and half at 350. I serve with spaetzle and red cabbage. Delist! Right on Chef John.??

My parents lived in Germany when I was a kid so I grew up on this. The only differences in how we make it are: i) After browning the rolls, we place in a 350 oven for 1 hour. ii) To make gravy, we add together baked drippings with mixed flour/water until it thickens, stirring constantly. I also don't believe nosotros've e'er used paprika. Then practiced! I as well frequently make some with chicken for non-beef eaters. It is well-nigh impossible to get it thin plenty, just the flavour is on bespeak!

Proficient I always like the idea of these. We all the same enjoy. The cooking time is always the issue. They dry rapidly. One infinitesimal the knife clearly doesn't insert easily the side by side it does but now may be dry. Watch small-scale ones with larger ones, they volition dry sooner. Sample i now and again to be sure. But I always like them.

I used 1 large round steak and pounded sparse. It was much easier than working with smaller pieces of meat. I then sliced on an angle. I also trimmed the fat off the ends of the bacon. Adjacent fourth dimension I will use center cut bacon which is leaner.

I honey these and take been making them for decades. My ex-wife is German language and her dad was an old-earth German butcher. Her mom taught me her version, which is very much like yours, simply includes a couple of blanched carrot wedges in each roll. Having been a chef from NYC/Long Island, NY, I like to play with my food. Some of the things I do differently is to 'par-cook the salary between two sheet pans lined with parchment; under and over the salary. Regular salary tin can exist used in place of pancetta if boiled commencement, to remove the unwanted flavors. Instead of butter, for my roux, I use bacon grease. It makes a difference.

We love, dearest, love this recipe! I merely use one large pickle spear instead of the three in the recipe. Otherwise, no changes. Great flavors and very simple.

Sounds exactly similar what my mother and grandmother made, minus the dill pickles. Thanks for the post, the cooking times are helpful. I used Cabernet to deglaze the pan to add to the flavour of the gravy.

I lived in Deutschland for four years back in the 90s. Ane of my favorite things to order out was beef rouladen. This is GOOD! I was able to observe a bundle of two round steaks (eight oz each) that were about 1/2 inch thick. I pounded them out to 1/4 inch and followed the recipe pretty closely. For some reason, my rolls looked alot bigger than Chef John'south in his video. I wound up cooking them in the gravy for nigh ii hours and 15 minutes and they were slap-up. I followed the suggestion to serve with mashed potatos. I likewise braised some royal cabbage with butter and a little balsamic. Thanks for another swell recipe!!

i have been making this for years Thanks for giving me some good new tips! Another variation that my sister-in-constabulary makes (her Mom as a High german cook for wealthy families) is to but use bacon, chopped onions, and sprinkle dill over it. That's it. I'yard not sure how I like information technology better so I normally do a few each way with each batch I make. Can't wait to go brand it now with your new tips!

I made iv pieces and used regular mustard instead of Dijon. The recipe turned out fairly well. Everyone seemed to like it. I establish the gravy that is fabricated with this recipe a bit salty. I used four cups of beef broth instead of the recommended. I would brand this again with a couple tweaks.

idea i'd attempt it with the pickle inside, information technology was very good. my family didn't use that, but used yellow mustard, diced onion, diced bacon, and instant rice. think i'll ultimately stick with the pickles on the side though. rouladen makes the all-time gravy i've ever had.

Wunderbar! I loved Rouladen in Frg and have missed it since I left. Serve it with some oven roasted potatoes or even Gnocchi. German language comfort food at its all-time. The recipe was like shooting fish in a barrel to follow. I do recommend string over toothpicks. It keeps the rolls together better. Guten Apetit.

I liked this. My moms friend was from Deutschland and used to make this for us as kids. Hers was definitely better. Notwithstanding, my married man was really into it. I would skip the bacon next fourth dimension as rubbery non crispy bacon just isn't my bag. Overall, it was tender with a prissy flavour and the gravy was quite practiced! I attempt numerous recipes and I know that I am very persnickety. It was very tasty. I did one with onions rather than pickle. When browning everything I used a stainless pan. I would use cast iron the next time. Gravy was very rich and delicious.

I doubled the number of rolls, but did not double the sauce and it was enough. The just change I fabricated was to apply Turkey salary equally this was what I had on hand and it turned out great and probably a bit more good for you! I also used sweet pickle in one curlicue just to try it and it was amazing as well!!

This is a bully Dominicus meal. The gravy on roasted potatoes was succulent. The rouladen plated nicely and non a lot of work. Did all the prep work in the morn and then let it cook while I prepared the balance of the dinner. Meat was tastey and tender.

2.nine.twenty I'thou so lucky because I have an Hispanic supermarket nearby that sells the beef exactly as called for in the recipe. Almost perfectly 1/4 inch thick, and it made assembling and rolling the beef very easy. I tasted the gravy before the beef went back into the pot for its ninety minutes cooking, and thought the flavour was a flake weak. I did add a flake of Better Than Burgoo® Roasted Reef Base, and that really kicked upwards the flavor. The gravy got fifty-fifty improve one time the rouladen started releasing its beefy flavor, along with the bacon. Gravy is IMPORTANT in this recipe, and I was extremely happy with the mode it turned out. The just alter I will brand in the future is reducing the pickles back to ii pieces which is personal taste. I planned this to terminate a couple hours earlier dinner, and so I just put it into the Instant Pot® and used the ho-hum cook function on low. The rouladen were and then very moist and tender that yous but about could cutting it with a fork. The gravy...unctuous and extremely breadstuff worthy. The meat.....fragile and soul warming. Excellent recipe for the Beefiness roll ups. Substituted Inglehoffer Stone ground mustard that I think is a improve mustard for this method. Also used an Au Jus gravy mix for cooking the rolls in. Careful with the cooking temps and level of gravy mix when cooking. I got the tops of the rolls well done once when the level gravy was depression.

Simple and delicious! I took the advice of others and baked information technology n the oven using my Dutch oven - I didn't desire to have to babysit it. (Instead DH & I went for a walk!) I added adjacent to no salt to the meat and the whole thing (rolls & gravy) was too salty then I'll eliminate all added common salt next time.

Meat was and then tough I had to throw my serving out. DH plowed through his considering he was hungry plenty to eat tough steak. I won't repeat this ane which is actually unfortunate because the gravy was to die for! The braised cabbage was a new thought for me and we enjoyed that a lot so information technology was not a total loss but a lot of work for likewise-tough to swallow steak.

A tad time consuming with all the steps of preparing and rolling the Rouladen, just expected. I did find thinly sliced beefiness round roast (label for making Carne Asada) The slices were large plenty to make the rolls. Followed recipe to the 'T' simply used toothpicks to concur rolls together equally did non accept cooking twine. This was served with Uli'southward Apple Red Cabbage and Chef John's Spatzel along with smashed potatoes. It was a wonderful German meal my hubby and I both enjoyed immensely!

Not bad Rouladen recipe. I doubled the recipe and used Better Than Bouillon. Cooked salary showtime but not crispy. Like my gravy a little less thick and then less flour. Cooking time was 2hrs in electric skillet on simmer turning every 20min. Do non add salt! I can over salt Rouladen very easy.

Family actually liked it. I fabricated this a month agone and am doing it once again tonight. Was actually easy with pre-cutting beefiness circular. I did utilise a dutch oven for the last part instead of cooking on the range. That worked out pretty practiced.

My just changes were: turkey bacon (it'south what I had), smoked paprika (I was out of the regular stuff ) and I added ruby wine to the gravy (because wine makes everything better). It was seriously awesome and reminded u.s. very much of our travels through Germany. Volition make again.

This is pretty proficient! I will definitely get in once more. My pieces of round meat were modest so I ended up with a few fiddling rouladen but that is OK good for leftovers! I was feeling adventurous and served it with a side of Incredible Tater casserole. Pairs well!
